With the International Cheese Technology Exposition just around the corner, Dairy Field magazine has liberally sprinkled this issue full of cheese trends and topped it off with a spotlight on Saputo Cheese USA.
Cheese has been one of the leading categories for the dairy industry over the last several years. According to Marketing Intelligence Services' ProductAlert, over 125 new products were introduced in 2001 in the cheese category representing 388 SKUs. In the dairy industry, that's second only to the frozen desserts category which introduced 155 new products and 472 SKUs last year.
