As indispensable food condiments, food additives are playing an important role in the development of the food industry. In the recent years the food additive industry in China has made a rapid development. There are already 6 series and 22 categories of food additives in China including spices/essences, sweeteners, colorants, emulsifiers/thickeners, preservatives/antioxidants and nutrition fortifiers. More than 1 500 varieties have been approved for use. The consumption of food additives in China reached around 2.0 million tons in 2001, a rise of 12 - 13% over the same period of the previous year, and the sales revenue reached 22.0 billion yuan.
