When brothers Chris and James Meskouris opened New York City's first Jackson Hole restaurant in 1972, neighborhood residents didn't quite know what to make of it.

"We were located in an upscale Manhattan neighborhood, and our restaurant was down in a basement," recalls Chris Meskouris, co-founder and partner of the fast-casual burger chain. "It was around the end of the hippie stage with the long hair and ripped jeans, and that's the look my brother and I had. People were afraid to come in the store because they saw two young, hippie-looking guys and they thought it was a front for some kind of illegal business."
