Like 'love and marriage', wine and cheese go together like 'a horse and carriage'. Yet whilst they can enjoy a perfect relationship, the assumption that any cheese will combine with any wine is fundamentally flawed.
Port and stilton may be a classic partnership, but matching problems may arise when a cheese has characteristics that are strong, pungent, fatty, acid or salty.
