EATING in Japan is just one great big lucky dip. You order a dish at random and then wait to see what sea creature lives in it.

Without an intimate knowledge of Japan's array of squiggles there is no choice but to choose your meal from the pictures on menus, or by pointing at plastic replicas of food placed in restaurant windows.
