How many bland, frozen, whitefish fillets can you think of that sell year in, year out for almost $5 a pound? Only a handful, including that wonder from Down Under, orange roughy.
So what is it about roughy that makes it so special?
First, of course, is the fish's funky name. After deciding its original name--slimehead--wasn't exactly going to make people lick their lips, the Kiwis came up with a clever moniker that grabbed consumers' attention.
