THE north west of England has a wealth of fantastic produce and a varied culinary history, which sadly seems tobe either forgotten or in some cases even sneered at instead of celebrating.
One classic example of this must be black pudding. Love it or hate, it has come to represent the region.
Black pudding has a long and illustrious history and Andrew Holt, who still makes his puddings by hand, is one butcher helping to make sure it stays alive.
He owns RS Ireland, the Real Lancashire Black Pudding Company, which makes Bury Black Puddings using the original 1879 recipe he bought with the business 10 years ago.
