IN A SECTOR with relatively few players, marshmallow suppliers might sit back and take it easy. After all, competition is relatively scarce compared with most candy segments.

On the contrary, suppliers are busy introducing new items, flavors and shapes, driving retail sales and presence.

This past Easter, for instance, Frankford Candy & Chocolate Co. introduced chocolate cream-filled marshmallows in the shape of chicks and bunnies. The company uses a process that allows a colored, sugar-coated, shaped marshmallow to be filled with a smooth cream.
