The first pairing of cheese and wine was most likely a heavenly mandate to ensure epicurean joy for the blessed. When the right wine and cheese are joined for snack and sip, it is a marriage made in heaven. Finding that perfect match has become a recent quest. I set out thinking that I would be guided by another favorite (and currently trendy) culinary truism: foods from a region are best accompanied by wines from that same region.
