Where's the beef?" Remember that famous ad from a major hamburger chain? Since it aired, the woman who uttered the catchphrase, Clara Peller, has passed away; Dave Thomas has passed away; and so have many beef cattle. Back then, eating beef was part of everyday American life.
When I had a gall-bladder attack, however, my doctor told me to refrain from red meat and caffeine. My health returned, and while I hadn't minded being on a limited-meat diet, I gradually drifted back to eating red meat. But something had happened: At Chicago's Earth Day two years ago, I met a variety of activists for a better environment, and my personal philosophies had started to change.
