Family-owned Alpine Cheese Factory automates its baby Swiss manufacturing line
When Alpine Cheese Factory automated its baby Swiss manufacturing operation two years ago, it did so with its eyes open. Now, the family-owned company, located in the heart of Amish milk producers, is finding improved uniformity, yield and quality in its final products.
Alpine makes about 300,000 pounds of cheese per month under the Alpine Alpa brand name. Most of that production is baby Swiss, in 4-pound rounds and rectangles, one of the fastest-growing varieties of specialty cheese.
