A waitress gave us a look of sympathy as she plunked down plates heaped with crispy roesti (hash-brown) potatoes and Wiener schnitzel. My husband and I exchanged glances, rolled our eyes. Our stomachs already ached from the entree-sized cheese fondue appetizers. We couldnt resist it, however. We were, after all, in New Glarus, Wis., a Swiss community in the heart of America's cheese country.
