Consumers may soon be able to make informed purchasing decisions about balsamic vinegar, thanks to a comprehensive ratings system presented by the Italian Association of Tasters for Balsamic Vinegar of Modena (AIB) at the Summer Fancy Food Show in New York.

The proposed rating system classifies balsamic on a one to four grape leaf scale, with four leaves being the highest quality. Certification will be prominently displayed on product labels of manufacturers willing to comply. To avoid confusion and to familiarize consumers with the new ratings, each product will bear a necktag explaining the certification and for what culinary use the product is best suited.
