WHEN I returned from my annual jaunt to Ohio recently, I was delighted to find many, many replies and inquiries stashed in my mail box.
How many? We received eight replies alone to Viola Chandler's request for a fresh coconut cake.
The recipes are basically similar, most starting with a cake mix baked in two (9-inch) cake pans, then sliced into four layers and filled with a creamy filling of fresh or frozen coconut, sour cream and sugar. Several recipes also use Cool Whip in the filling and all suggest refrigerating the cake for at least 24 hours - some up to several days - to mellow.
