Move over, mozzarella, and make way for "light cheeses." Sitting side-by-side with their full-fat counterparts in the supermarket, some light cheeses offer less calories, fat, sodium or cholesterol.
However, because the term "light cheese" lacks a federally approved standard, the products themselves can vary greatly in their lightness. Careful scrutiny of the nutrition label should reveal what component in a light cheese product is truly reduced, and whether or not the reduction is a significant one.
