Wisconsin artisan and specialty cheesemakers made a strong showing at the 2002 American Cheese Society (ACS) conference and competition, Aug. 1-4 in Washington, D.C. The conference, designed to celebrate artisanal and farmstead cheeses and to support and educate North American cheesemakers, drew a record attendance and a record number of entries-469- in its judging competition. ACS award-winning cheeses are widely regarded among the best in the world.
