When you have a time-proven recipe, you don't change it. Sticking with tradition is the cornerstone of success for Tillamook Cheese, Tillamook, Ore. Tillamook's award-winning cheeses -- colby, Monterey jack, pepper jack and colby jack, to name a few -- have been made using the same recipe for 100 years.
The cheese-making process, however, is a different story. Over the years, many improvements have been made, including equipment upgrades and the construction of a new plant. Tillamook Cheese's newest location in Boardman, Ore., Columbia River Processing Inc., was built based on experiences the company had with equipment in the old plant.
