AKRON, Ohio _ America is divided into two grilled-cheese camps _ those who use griddles and those who use skillets.
Personally, I can't imagine cooking a grilled cheese sandwich in anything but a cast-iron skillet. Griddles seem exotic. In my family, making a grilled cheese sandwich in a griddle would be the culinary equivalent of social climbing.
But that's just me. If Granny's old griddle is lurking in the back of your cupboard, please get it out. Because tonight is grilled cheese night.
A grilled-cheese sandwich can soothe a cold, comfort a hurt, or calm _ however briefly _ the jitters. It is golden-brown reassurance in a seared-raw-tuna ...
