The processing technology already exists. The problem with taste has been resolved. Now the key to broadening the market for extended shelflife milk might be packaging. Plastic packaging.
Presently, the primary application for ultra-high temperature (UHT) processing is in the specialty products category-items like whipping cream, half & half, and flavored milk. But in the future, if UHT products are to outgrow their niche status and enter the retail mainstream, plastic could have an important role to play. More than 50 percent of all fluid milk sold in this country, after all, is packaged in plastic containers.
