Modern pork production practices have virtually eliminated trichinae from hog and pork production in the U.S., but a number of U.S. export markets, including Russia, still have costly and disruptive regulations in place to check pork for trichinosis, according to the U.S. Meat Export Federation (MEF).
For instance, pork exported to Russia must be either frozen as prescribed by a U.S. Food Safety & Inspection Service process or tested and declared trichinae free -- both steps adding costs and delays to getting pork into the Russian marketplace, MEF said.
