Mention "Hot Brown," and folks either look mystified or they immediately call to mind an open-faced turkey sandwich smothered in a delicate cheese sauce and topped with crisp bacon strips. It originated at The Brown Hotel (now The Camberley Brown) in Louisville, Ky., in 1923.
The hotel's current executive chef, Joe Castro, comes from a big food family; he and brother John Castro, executive chef at Winston's Restaurant and a culinary instructor at Louisville's Sullivan University, often cook together.
