Q: What's the difference between table salt, kosher salt and sea salt? Can you use one for the other in most recipes, or is there a reason that a specific type may be called for? - Judi S.
A: Table salt is mined from underground salt deposits, sea salt is the residue of evaporated seawater, and kosher salt can be mined or from the sea. Chemically, there is little difference between the three. All are at least 97 and one-half percent pure sodium chloride, with trace elements of minerals, primarily magnesium and calcium compounds.
Sea salt is not as purified as table salt and may contain a tiny portion of minerals from the water it came from. These minerals ...
