"Thousands - maybe more," says Duyen Le when asked how many fresh summer rolls he sells at his five Pho Pasteur restaurants - the latest just opened at the Atrium Mall in Chestnut Hill.
When Le opened his first Pho Pasteur in 1990, he only served noodle soups. But with the opening of additional locations, Le added other Vietnamese dishes to the menu. The fresh summer rolls, wrapped in rice paper, were an immediate (and enduring) hit with diners.
"In Vietnam, we eat them as a snack or appetizer - Americans love them," Le says. "They're delicious and they're healthy. No fat. Diet food."
