I'm not sure why a pie crust full of whipped cream with berries on top isn't an American classic, but it certainly isn't - people giggle when whipped-cream pie is suggested.
The challenge of what to do to the pile of whipped cream to make it somehow more respectable as a pie filling is met nicely in this recipe with a substantial addition of white chocolate and a bit of gelatin to keep everything from getting soupy when you cut the pie.
