The FAO and the WHO of the United Nations approved xanthan gum as a food additive in 1983 and the production and development of xanthan gum has therefore been stimulated and promoted.

Nankai University, Shanghai Research Institute of Chemical Industry and Zhengzhou Polytechnic University started research into xanthan gum at late 1970s. Commercialization was achieved in 1986.
