If game conjures images of strongly flavored, very expensive or very exotic fare, think again. Employees at Steelcase, an office furniture manufacturing company in Grand Rapids, Mich., can walk into the cafeteria and choose a duck, quail, venison or buffalo entree for lunch. The Goose Island Brewery, a midscale restaurant in Chicago, regularly offers pheasant and venison. The Fort, in Morrison, Colo., outside of Denver, has built its reputation on serving buffalo and other game dishes reminiscent of the Old West. And in the Northwest, where locally grown and produced foods are menu kings, game such as elk, moose and antelope is becoming regular fare.
