It has taken more time for Murray's Cheese Shop, a store revered by New York foodies, to expand than to age the world's finest Parmesan.
After 62 years in a tiny space in Greenwich Village, Murray's is planning to open a second store next month. It will be in Grand Central Terminal and targeted to that area's enticing market of commuters and corporations.
``Cheese has become very popular lately. It was time to grow,'' says Rob Kaufelt, a third-generation grocer who bought Murray's in 1990.
The new shop is just one part of a burst of activity in the city's specialty food business after years of slow growth. ...
