This recipe was inspired by Alvin Ailey dancers Jeffrey Gerodias' Filipino heritage. A self-described meat-and-potatoes kind of guy, he exhibits an adventurous streak with a taste for ethnic foods of all kinds. Celina Tio, executive chef of the American Restaurant, created a dish to give Gerodias "the best of both worlds."

1 teaspoon chili powder
1 teaspoon ground coriander
