BLACK Beluga lentils from the northern plains of America are a dramatic new addition to the already extensive range of lentils available to us. They are smaller than blue/green Puy lentils but have a similarly firm texture and delicate yet assertive flavour.
Sold by Merchant Gourmet in 500g dark purple boxes they require no pre-soaking and cook in about 20 minutes.
