Nov. 17--It's understandable that the new executive director of the South Dakota Value-Added Agriculture Center has a special interest in cheese.
Dallas Tonsager, 48, grew up on a dairy farm near Oldham.
Tonsager is still a partner with his brother in the family operation, although it no longer has milk cows.
He sees potential for increasing the amount as well as the varieties of cheese made in South Dakota, and for adding value to what's already produced. It should be leaving the state ready for retail sale, he said.
