Nov. 23--BELEN, N.M.--Nick Romero's passion has always been to be a cook in his own restaurant, and now he's living his dream.
Romero, a former longtime fixture at Romero's Funeral Home in Belen, this fall opened the Rio Cabana Grill, a drive-through and carry-out restaurant that serves breakfast burritos, fajitas, hamburgers and other New Mexico favorites.
"We are rocking," Romero said of response so far to the business located inside a former bank branch at 699 Rio Communities Boulevard.
