Food safety issues are at primary importance to us all as consumers and to the food industry as food providers. Each stage of the food supply chain, from food production to retail via processing, packaging, storage and distribution, has its own particular problems that need to be overcome in order to control or prevent contamination of foods. The consumer also has a key role to play, since a lack of good food hygiene practices in the home can also result in food-borne illness.
