SAN DIEGO _ Fish tacos have found their way onto menus all over the country, but this is where they catapulted from local beach snack to cult status to emerging fast-food staple.
Nationally, chains such as Baja Fresh are taking fish tacos nationwide. The evolution reads like a surf slacker's success story.
College student Ralph Rubio liked spring-breaking on the San Felipe beach south of San Diego in Baja, the skinny peninsula that extends from California into Mexico. He particularly loved the fish tacos sold by a beach vendor named Carlos.
