Balsamic, good balsamic at that, is much more than just brown vinegar. Its both a distinctive flavor and a fantastic enhancer of other flavors as well.
The trick is to use balsamic vinegar sparingly if you want to bring out other flavors.
For a sweet, smoky flavor, use a liberal amount but try to use only half of what you would use if it were white vinegar.
On salads: Balsamic vinegar is often used as the vinegar component in salad dressings. Here is a tip: In a salad bowl, place 1/2 of extra virgin olive oil and add a little balsamic vinegar to it.
