A READER wrote to me recently asking if I could come up with a chicken and bacon lasagne because she prefers not to use beef or lamb.
I opted for minced rather than finely chopped chicken and flavoured the sauce with lemon and spinach. It was a huge success and I thank JF of Balcombe, Sussex for prompting me to make it.
