Following is a sampling of recipes from Kathy Keenan Isoldi's book, "The Woman's Day Weight-Loss Plan." None of these recipes screams "diet" or contains obscure ingredients. Oatmeal in the first recipe contains water-soluble fiber, Isoldi notes, which is great for dieters because it absorbs water and expands in your stomach, making you feel full longer. Commercially prepared muffins and breads may contain up to 400 calories and 20 grams of fat per serving, she adds.
CRANBERRY-NUT MUFFINS
1 cup non-fat milk
1 large egg
2 tablespoons olive oil
1 teaspoon vanilla extract
1 cup old-fashioned rolled oats
