Vegetarians and those who will have more fish on the menu during the Lenten season often welcome a casserole of macaroni and cheese to the table. It can be fancy -- no elbows but a pasta with more panache like ziti or penne -- and at least five different cheeses, all aged, some with blue veins. Don't expect children to be open to this sort of experimentation.
Today, we're advancing ordinary, everyday recipes for macaroni and cheese with golden Cheddar color and elbows only. Kids love it. Some might want the stuff from a blue box, but that is another style, nothing akin to elbow macaroni actually baked in a cheese sauce. So ...
