MILWAUKEE -- A Dodgeville dairy farmer who thought his cows' milk was something special made a French-style nutty Gruyere and won the prize as top U.S. cheese.
The 10-pound wheel of Pleasant Ridge Reserve from Uplands Cheese beat 650 other cheeses from 21 states Wednesday in the U.S. Championship Cheese Contest in Milwaukee.
Dairy farmer Michael Gingrich said he became a licensed cheesemaker because his cows' milk is so good. For his Pleasant Ridge Reserve, he uses only summer milk from 150 pasture-fed cows he and his wife own.
The cows eat nothing but grass between May and October, and the milk they produce is trucked to the Cedar ...
