ST. ALBANS, Vermont - Cotton candy and hot dogs on sticks, usually the most popular of fair fare, bow to sugar on snow at the Vermont Maple Festival.
Meanwhile, at the New England Maple Museum, visitors can examine antique maple sugaring equipment before tasting syrup samples.
And when the steam is rising above Harlow's, a Vermont sugarhouse in the classic sense, people can watch sap being converted into syrup, as has been done for decades here.
