SINCE APRIL SHOWERS bring May flowers, we can't really gripe when the rain streams down. To make a chilly spring day seem cozy, mix up some fragrant, great tasting muffins. A variety of grain meals and flours creates a wide array of flavors and textures, each of which sets off a fast meal to perfection.
Start the day off right with chunky, whole grain Date & Apricot Muffins. Oatmeal, bran, rice and barley flours create a full, complex flavor that enhances the sweet, chewy fruit pieces. If you prefer, use half whole wheat pastry flour and half Roman Meal hot cereal containing wheat, oats, rye, bran and flax.
