Catfish Pesto borrows and combines ideas in a tasty new way for a stylish presentation of a familiar, nutritious food.
It's catfish with a difference, nicely dressed with Pesto sauce.
And it's Pesto with a difference, based on the Italian classic, given a Southern flavor.
Catfish Pesto
Pesto (recipe follows)
2 cups all-purpose flour
1 tablespoon plus 1 teaspoon salt
1 tablespoon cayenne pepper
6 catfish fillets
2 tablespoons vegetable oil
2 tablespoons butter
Grated Parmesan cheese
Pesto:
2 cups tightly packed fresh parsley leaves
1/2 cup grated Parmesan cheese
1/2 cup grated Romano cheese
1/2 cup pecan pieces
1/2 cup olive oil
2 tablespoons butter, cubed
