If you've ever attempted caramel sauce, you know the drill.
The whole process starts out simply enough, then, there's the matter of hitting the precise degree on a candy thermometer and washing the sides of the pot with a wet paintbrush to banish the dreaded crystals. Pretty soon, you have a headache, not to mention zero day left.
This was only half the ordeal Alicia described when she recently made caramel sauce from scratch. (It was a mother-daughter cooking lesson. Daughter picked the recipe. Need I say more?)
