Vegan Spanakopita has adapted to be suitable for serving as part of holiday dinners. It is based on the original, a traditional rich, Greek dish of feta cheese and spinach wrapped in flaky phyllo dough. Tofu is a successful substitute for the cheese.(PHOTO) (ASSOCIATED PRESS PHOTO/JIM COLE)
For my family, no holiday meal is complete without a platter of Mom's vegan spanakopita.
We're not sure how the tradition began. Our Jewish-French Canadian-Russian-American Indian roots just don't seem to call out for the rich, Greek dish of feta cheese and spinach wrapped in flaky phyllo dough.
Of course, our version of the dish didn't start ...
