For my family, no holiday meal is complete without a platter of Mom's vegan spanakopita. We're not sure how the tradition began. Our Jewish-French Canadian-Russian-American Indian roots just don't seem to call out for the rich, Greek dish of feta cheese and spinach wrapped in flaky phyllo dough.
