* Four 6-inch corn tortillas
* 1 cup canned refried beans
* 2 tablespoons unsalted butter or vegetable oil
* 8 large eggs
* Salt and black pepper, freshly ground
* 1/2 cup grated Monterey Jack
* 1 avocado
* 2 teaspoons fresh lime juice
* 1/2 cup prepared salsa
* 1/2 cup sour cream
* 1/4 cup fresh cilantro, coarsely chopped
* 1 green onion, white and green parts, thinly sliced on bias
