The following quick recipe is from an idea from the Test Kitchens of the National Livestock & Meat Board.
Beef-Stuffed Pita With Feta and Cucumber-Yogurt Sauce
Yogurt Sauce:
1 cup plain low-fat yogurt
1/2 cup peeled, seeded and diced cucumber
2 small green onions, thinly sliced
1/4 teaspoon dried dill, crushed
1/4 teaspoon dried oregano, crushed
1/8 teaspoon salt
1/8 teaspoon cayenne pepper
Stuffed Pita:
4 pita breads
1 teaspoon olive oil
3/4 cup thinly sliced onion
1 medium clove garlic, peeled and minced
3/4 pound lean ground beef
1/2 teaspoon dried dill weed
1/2 teaspoon dried oregano, crushed
