For all those who yearn for cream cheese, rich cheesecake or other delicacies prepared with cream cheese, here is a way to get your wish with half the calories and sodium, and almost no fat or cholesterol: yogurt cheese. All you need is a strainer and a bowl.
To prepare yogurt cheese, line a strainer or sieve with double layer of clean cheesecloth or white paper towels. Place over medium bowl. Pour in nonfat yogurt, cover with plastic wrap and refrigerate 24 hours. Turn out yogurt cheese and keep wrapped or store in tightly sealed container.
