For successful cheesecakes, keep these hints in mind.
* For best results, use the pan size specified in the recipe. A springform pan is a wise investment.
* Vary crusts according to your likes and the flavors of the filling mixture. Shortbread cookies, graham crackers, Zwieback, vanilla or chocolate wafers, gingersnaps, a variety of other cookies and sweet pastry all work well for sweet cheesecakes.
