Like the chefs who eat sandwiches for supper after they have fed fancy dishes to their clientele, professional bakers often prefer simple pound cakes to the glorious desserts they make.
"The simple cakes that you would like to have with an afternoon cup of coffee or a glass of tea are not the cakes people order in a restaurant," said Helen Glassman of Greyston Bakery in New York.
