If Rick and Kathi Petrocelly have their way, olive oil will replace butter, margarine and other oils as a food preparation staple. And with good reason.

"I think Americans are getting in tune with the health benefits of olive oil," said Rick, a self-described foodie of Mundelein who, with his wife, owns the two-month-old specialty shop, The Olive Tap in Long Grove. "Olive oil reduces the bad cholesterol and raises the good cholesterol," he said.
