I've never been one for apple pie. Maybe it's because I equate commercialized apple pie with sugary canned pie fillings, gummy with syrup and deficient of any real firm apple tartness. Maybe it's because I don't care much for red apples, and their mildness gets lost in a stale double crust. To me, apple pie was boring and, despite its American imagery, I've always thought the taste was overrated. That was until I first tried the Dutch (or sometimes known as French) apple pie. It's everything I've ever wanted in an apple pie: sweetness, spice, crunch, and best of all, it has flavor in the tart bite of firm apples.
